Simple Baked Tilapia

If you're looking for a simple, easy fish dinner, look no further than a great tilapia. Today I wanted to provide a super easy, super simple main course dish that was full of flavor, but also simple in directions and ingredients. I combined a few fresh herbs with a little butter to allow the fish to remain moist, and simply baked at 400F. This is a great fish for kids considering how easy the dish is to make and the flavor is to die for!
Adding lemon juice provided an acidity and complexity that would otherwise be missing in this simple dish. If your concern at all is for the sustainability of the fish, try to get a farmed tilapia, as this type of fish adapts particularly well to farming. Even if you can't find farmed tilapia, it's still the most environmentally friendly option. If you want to be fancy, serve with a side of asparagus in hollondaise sauce. 


Ingredients
  • 6 fillets tilapia
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 4 teaspoons fresh parsley
  • 1 tablespoon fresh dill
  • salt and pepper

Directions
  1. Preheat the oven to 400F.
  2. Melt the butter on a low flame in a small sauce pan. Add the garlic and saute on low for about 1 minute.
  3. Add the lemon juice and turn off the heat.
  4. Spray the bottom of a baking dish lightly with cooking spray, or grease with butter.
  5. Place the fish on top and season with salt and pepper.
  6. Pour the lemon butter mixture on the fish, and top with the fresh parsley and dill.
  7. Bake for 15 minutes and enjoy!
