Spaghetti Squash

Cheesy Spaghetti Squash
Ripe tomatoes, mozzarella and Parm come together for a delectably smart way to enjoy fresh squash. Especially for those little ones who love veggies! This dish is so simple, it only takes 15 minutes! Kids love getting their hands into making (and eating) this!

Ingredients
  • 1- 2 1/2lb de-seeded spaghetti squash
  • 2 tablespoons of water
  • 1 cup of pasta sauce
  • 3 tablespoons of shredded Parmesan cheese
Directions
  1. Place half of a 2-1/2-pound de-seeded spaghetti squash, cut side down, in a baking dish with 2 tablespoons water; cover with wax paper.
  2. Microwave on high for 10 to 12 minutes, or until tender.
  3. Let cool slightly, then scrape strands from squash.
  4. Toss with 1 cup pasta sauce and 3 tablespoons shredded Parmesan cheese.
